BUTTER MURUKKU / VENNAI MURUKKU / DIWALI SNACKS



My family is a big fan of this butter murukku.  My dad buy this from Anandha bhavan sweets and I just can't stop eating this butter murukku until it get empty from the packet.  My brother loves this! The flavour of this muruku is totally different from others.  It is the combo of rice, pottukadalai and besan flour.  The flavour of asafoetida and zeera will make us to eat a lot :-)  Occasionally to have this is fine too :-)  My friends asked me to make this and here it is on in Kaushi's Kitchen now :-)

INGREDIENTS:

Rice flour              - 1 cup
Pottukadalai flour - 2 tsp
Besan flour           - 2 tsp
Asafoetida            - 2 pinches
Cumin seeds         - 1 tsp
Melted butter        - 1 tsp
Salt                       - as needed

HOW TO MAKE:

In a bowl mix all the ingredients and give it a mix.  Add water little by little and make a fine dough.

Heat oil in a kadai and take star press for this butter murukku.  Fill up the dough in the press and start to squeezing directly in the hot oil.  Cook in the medium flame and stir it between now and then. Cook until the oil shhh sound and the bubble sound gone.  Take out from the oil and drain it on a paper towel.



Store it in an airtight container once it cooled down.


TIPS:

Always start heat up the oil before mixing the dough.  The time will be perfect, by the time you mix the dough the oil will be hot.  This helps the dough to keep its moisture for sometime.  In between if it get hard and dried sprinkle water and make a smoothy dough.

Ajwain / Omam can be added instead of cumin seeds, but for this butter murukku cumin seed is perfect.

Hot oil can be used instead of melted butter.
