KAJU KATLI / DIWALI SWEETS


I have posted Kaju Katli recipe couple of years back in my blog without step by step processing. Today I am posting it in a easy way to make it with detailed pictures.  I didn't plan to make it for this year but one of my friend Janani asked me about this recipe and it just drove me to do it.  Thank you Janani for motivating me to do it :-)  Long time back I tried and it got vain...Then I made it two to three times and it was perfect.  I have referred two to three websites and got an idea to make it perfect couple of years back.  Now it is here for you all to make it easily with step by step processing :-)

INGREDIENTS:

Cashews            - 1 cup
Sugar                 - 1/2 cup
Water                 - 1/4 cup
Ghee                  - for greasing
Milk                   - 1 tsp optional

HOW TO MAKE:

In a dry mixer / blender powder cashews.  If the cashew is cold which is taken from the fridge, bring it into room temperature then make a powder.


Boil sugar in a pan / kadai with water and keep stirring.  Let the sugar get dissovle in the water and it will start bubbling.  The consistency should be like if you pour few drops in a little water it should not get dissolve in the water.  It will lay the fine thread in the water. That's the right consistency.  I missed to click that picture.  Sorry about that.  

Once it reached that consistency add the grounded cashew and keep stirring in a low flame.  In 4 to 5 minutes the mixture gets thick and it starts boiling.  


When it started thickening switch off the flame and keep stirring.  wet your hands with water and take a little mixture and test by rolling by your fingers.  It should be able to form a non sticky ball and that's the correct consistency.  

Keep stirring continuously and the mixture turns like a dough.  Grease a plate with ghee and pour the mixture in it.  Spread it with spatula and make a thin layer and cut pieces diagonally.

TIPS:

Keep an eye on the sugar syrup consistency.  If it not in the right consistency then the dough will be very sticky.  

One of my friend told that milk can be added when you knead the dough in the final level.  I never tried it and can be tried.
