POTTUKADALAI MURUKKU / FRIED GRAM DHAL MURUKKU / DIWALI SNACKS

Pottukadalai muruku is very easy to make which can be made an easily available ingredients.  We usually make thenkuzhal with rice flour and urad dhal flour and this one is different with roasted gram dhal instead urad dhal.  We don't get this unique flavour from other thenkuzhal which we normally make.  This is very easy and try for this Diwali 2014 which everyone definitely will love. Enjoy this Diwali with this unique crispy muruku :-)

INGREDIENTS:

Rice flour                  - 1 cup
Pottukadalai powder - 1/4 cup
Asafoetida                 - a pinch
Ajwain / omam         - 1 tsp
Hot oil                       - 1 tsp
Salt                            - as needed
Oil                             - for deep frying

HOW TO MAKE:

In a blender / mixie powder the pottukadalai finely.  Sieve it and in a bowl add rice flour, pottukadalai powder, asafoetida, omam, hot oil and needed salt.

Add water little by little and make a fine dough.  Heat oil in a deep pan / kadai.  Take a muruku press as shown in the pic and fill the dough in the press.  Take a wide ladle or a small plate.  Grease on the top side and start to make murku on it.

Make sure that the oil is hot enough and start to drop the murkku one by one in the hot oil.  Cook on both sides.  The oil sound and the bubbles should be reduced and that time take out the murukku. Drain it on a paper towel to remove excess oil.

Once the murkku cold down store it in a airtight container.

TIPS:

The dough should be stiff and thick at the same time should be very flexible.  Otherwise it will be hard when you press the murukku.

When flipping the murkku make sure that the murukku is cooked on that side else when you flip it, the murukku will get fold.

Cumin seeds or sesame seeds can be added instead ajwain / omam.

If the dough got thicker or dry sprinkle some water and make smoothy dough.
