CHANDRAKALA SURYAKALA


Chandrakala Suryakala is one of the mouth watering sweets which I just love it.  Most of my friends are unaware of this sweet.  My dad used to get for us from "Archana Sweets" stall in Trichy.  My sister Puvi & my cousin Ramya catch my thought whenever my taste bud yearns for this and get for me from Manna Sweets Chennai.  Oh it might be pretty exaggeration byt can't stop expressing the taste that lingers, anyways sweet is a sweet right :-)   The Oval / round shapes decide the name and thus this lovely sweet gets christened as Chandrakala Suryakala respectively.! :-) I wished to try out this for last Diwali itself but it got vain.  The excess preparation of Khova drove me to add even this to my today's dessert (resource managment! :-) ) So Guyzzzzz...try this out your home and have a K(G)ala Diwali :-)

INGREDIENTS:

For dough:

Maida / All purpose flour - 1 cup
Melted butter                    - 1 tsp
Cooking soda                    - a pinch
Salt                                    - a pinch
Water                                 - as needed
Oil                                      - for deep frying

For stuffing:

Khoya / Palkova                - 1/2 cup  for recipe click here: Palkova / Khoya
Mixed nuts                         - 1/4 cup (Cashew, Badham, Pista & 1 Elachi / Cardamom)

For syrup:

Sugar              - 1 cup
Kesar powder - a pinch
Water              - 3/4 cup

HOW TO MAKE:

In a bowl mix maida, cooking soda, melted butter and salt and make a soft dough by adding water water little by little.  Keep it aside for 30 to 45 mins.


Meanwhile we can prepare stuffing.  Dry roast the nuts in a kadai and allow to cool down.  Do not burnt.  In a blender / mixie make a fine powder of it.


In a bowl take Khoya / Palkova and add the grounded nut mixture.  Mix well and keep aside. Stuffing is ready now.


In a pan or kadai add sugar and water.  Let the sugar dissolve well and make a syrup for one string consistency as shown in the pic below.


When the syrup is getting ready we can start to make chandrakala.  Take a small lemon sized ball of dough and make a thin small circle of it.  Make the corners thin and the centre of the circle can be little thick.  Keep one tsp of stuffing in the middle of the circle.


Fold the circle into half and and make spirals in the corners by your fingers as shown in the pic below.
Likewise make the 5 to 6 and keep it ready.


Heat oil in a kadai and drop the chandrakala one by one in the oil.  Let it get fry in golden color. Flip it by care and let cook it both sides.


Syrup is ready and drop the chandrakala in the syrup and let it get soak for 10 to 15 mins.


Meanwhile we can make Suryakala.  For this we need two circles.  Take two small lemon sized balls and make a thin circle as you made for chandrakala.  Keep the stuffing in the middle of one circle and cover it with other as shown in the picture.

Grease corner with water and make a spiral by your fingers as shown in the picture below.  Fry it until it turn into golden color.

Dip the suryakala in the syrup and take out the chandrakala which you soaked before.  Let the suryakala get soak in the syrup for 10 to 15 mins.


Place Chandrakala Suryakala on the plate and the sugar syrup and it will get a nice shine.  After sometime the sugar syrup will be coated on the top of the sweet.  Store it in a box after cooled down.



TIPS:

The dough should be non sticky and pliable.  Like we do chappathi here we do not dust the circles on the flour.

If you get unsweetened khoya / palkova grind sugar along with the nuts.  I used home made khoya and the recipe is there on the side.

Make the spirals carefully and it is not supposed to be opened when you fry it.  Two chandrakala got spoiled and then I got right.

One string consistency is enough and do not make thick syrup.  That will give sugar crystallised quickly.
