ALOO BHUJIA SABZI / ALOO BHUJIA STIR FRY - NORTH INDIAN STYLE




Yummm..What a delicious bhujia!!! Thank you so much for the scrumptious recipe Aneesa!  Yes, when I heard about this recipe I thought bhujia is a potato sev but this bhujia stir fry is totally different and a wonderful side dish!  It goes well with rotis and pulkhas.  It is very simple stir fry of potatoes flavored with aromatic spices.  Aloo ki sabzi is very popular in Indian household and this North Indian Style Aloo Bhujia Sabzi / Aloo Sabzi stir fry.  Kids just love this delicious sabzi!!!




INGREDIENTS:

Potato                 - 6 to 7 (I used red one gold potato can be used too)
Tomato               - 2 finely chopped
Crushed garlic    - 2 tsp
Coriander seeds  - 1 tsp
Cumin seeds       - 1 tsp
Pepper                 - 1/4 tsp
Turmeric powder - 1/4 tsp
Asafoetida / hing - 2 pinches
Salt                      - as needed

To temper:

Oil                        - 2 tsp
Cumin seeds         - 1/2 tsp
Red chillies           - 2 to 3

HOW TO MAKE:

Wash the potatoes and cut into slices and need not to peel the skin.  Keep it in a bowl of water.  Take coriander seeds, cumin seeds and pepper in the blender and grind it coarsely.  Not a fine powder. Heat oil in a pan add cumin seeds, red chillies and asafoetida.  Add crushed garlic and tomatoes. Add spices which you grind coarsely.  Mix well and add turmeric powder.  Let the tomatoes get tender. Add needed salt.


Add potatoes and blend with the masalas.  Stir often and do not add water.  Cover it and cook and stir now and then until the potatoes get cooked.  


TIPS:

Chopped onion can be added.

Ajwain seeds and garam masala can be added too.

Jalapeno peppers can be added instead red chillies.  It will be too spicy so add depend on the spice level.
