TOFU MASALA / TOFU MASALA CURRY



My ever first Tofu recipe!!! It was long time that I was thinking to make tofu recipes but I did not happen till I found this Organic Tofu in Costco.  I love tofu dishes in Thai cuisines and whenever we go to Thai restaurant I always order the curries which has tofu.  But I never tried making it!  I was keep on postponing until I met Anjana!  She shared tofu kale recipe in our group and thats's what pushed me to buy tofu! Thank you Anjana :-) Tune on with my posting and it's gonna decorate with tofu recipes often!!!  I know everyone loves paneer, but if you are diet conscious then start making curries skipping paneer.  I prepared less just for checking whether my kids like it, but....they loved it! Now on I can make tofu curries often than paneer.


Coming to the health benefits, it is made from soybean curd, is naturally gluten free and low calorie, contains no cholesterol. It is an excellent source of protein, iron and calcium, especially for vegans, vegetarians and those looking to move toward a more plant-based diet.  Consuming plant-based foods of all kinds has long been associated with a reduced risk of many lifestyle related health conditions.  

INGREDIENTS:

Tofu                       - 2 cups cut into cubes
Onion                     - 1 make a fine paste
Tomato                   - 2 make a fine paste
Ginger garlic paste - 2 tsp
Oil                          - 1 tsp (I used coconut oil)
Red chilli powder   - 1/2 tsp
Coriander powder   - 1 tsp
Garam masala         - 1 tsp
Turmeric powder    - 1/4 tsp
Cashews                 - 10 make a paste
Lemon juice           - 1 or 2 tsp
Coriander leaves    - for garnishing
Salt                         - as needed

TO TEMPER:

Oil                          - 1 tsp ( I used coconut oil)
Cumin seeds / Jeera - 1 tsp

HOW TO MAKE:

Wash tofu, squeeze gently to drain the water.  Cut into cubes.  Heat a tsp of Coconut oil (any cooking oil can be used ) and saute the tofu pieces until turn into golden brown.  Keep aside.



Heat a tsp of coconut oil (any cooking oil can be used) in a deep vessel / pan add cumin seeds. Add onion paste (In blender / mixie add onion and make a fine paste of it by adding little water) along with ginger garlic paste.  Mix well and cook till the raw smell goes off.  Add tomato puree (In a mixie / blender add tomatoes and make a fine puree).  Add needed salt.


Mix all the ingredients, add red chilli powder, coriander powder, garam masala and turmeric powder. Blend well with the masalas.   Allow to cook for 5 to 10 mins.  


Meanwhile in a mixie / blender add cashew nuts and make a fine paste of it by adding little water. Add the cashew paste in the masala and mix well.  Add little water and allow to boil.  It forms a thick gravy and add little more water as needed the consistency.  Cook until the raw smell goes off.   


Add tofu pieces and mix well without breaking them.  Cook in a medium flame for 5 mins.  Turn off the stove.  Add a tsp of lemon juice and mix it.  Garnish with chopped coriander leaves.  


TIPS:

Peas can be added to make paneer mutter.

Add mixed veggies to make a mixed vegetable tofu curry.

Adding coconut oil is fully your choice and any cooking oil can be added.

Add green chilli paste instead red chilli powder and it can be grinded along with ginger and garlic.

I made this as vegan friendly and for butter lovers can add butter to make Tofu Butter Masala.
