CAULIFLOWER RICE


Cauliflower Rice is a substitution for rice and it is just amazing.   Very easy to make, low calorie, gluten free and of-course diabetic friendly.  I never heard about this surprising delicious recipe until I got the recipe from my friend Aneesa.  It is mind blowing recipe which is very healthy.  Whether you are trying to sneak more vegetables I WOULD say this is the best!!!  Enjoy scrumptious simple and best recipe for low-carb cauliflower rice.  It can be eat alone as a side dish or use as a rice substitute to make low carb meal.  



INGREDIENTS:

Cauliflower             - 1 
Peas                         - 1/4 cup
Carrots                     - 1/2 cup cut into small pieces
Capsicum                 - 1 cut into small pieces
Green chilli              - 1 
Garlic                       - 2 cloves
Ginger                      - 1 small piece
Salt                           - as needed

HOW TO MAKE:

Wash well the cauliflower and seperate the florets.   By using the food processor make a coarse powder kind of.  Make sure that the florets are completely dried before put it in a food processor.  
In a blender / mixie add green chilli, garlic and ginger and make a fine paste.  


Heat oil in a large pan, add cumin seeds and chilli, ginger garlic paste.  Fry it well till the nice aroma comes, then add the mixed veggies except cauliflower.  Blend and stir fry the veggies for 5 mins.  Need not to be over cooked.  Add cauliflower and mix well.  Add needed salt.  


Stir often and cook until the cauliflower get cooked.  Do not add water.  It can be eat alone as a rice or as a side dish. 


TIPS:

Add more veggies as you want.  Adding more veggies more healthy.

Adding masala and other ingredients totally of your choice.
