COCONUT RICE / THENGAI SADHAM



Coconut rice and potato fry is one of my favourite and my mom makes this often.  It is very simple to make at the same time we can give kids as lunch.  I wanted to post this during last Navrathri but I could not.  Finally today I did it!  This is very easy and simplest variety rice.

INGREDIENTS:

Cooked rice        - 1 cup
Grated coconut   - 1/2 cup
Salt                     - as needed

TO TEMPER:

Oil                      - 1 tsp
Mustard seeds    - 1/4 tsp
Urad dhal           - 1 tsp
Peanuts              - 3 tsp
Asafoetida         - a pinch
Red chillies       - 2 break into pieces

HOW TO MAKE:

Heat oil in a pan / kadai splutter mustard seeds, add urad dhal, red chillies, peanuts and curry leaves. Saute well until the peanuts turn into golden color.  Add asafoetida and now add grated coconut. Saute in a medium flame and when it mix well.  


Make sure that the coconut leaves its moisture and nice aroma comes.  Turn off the stove.  Add cooked rice and needed salt.  Mix well.  Serve with potato fry, brinjal fry or any chips :-)



TIPS:

Fried cashews can be added instead peanuts or add both. 

Channa dhal can be added.
