VEGETABLE DUM BIRYANI / OVEN BAKE BIRYANI



My ever favourite!!! Yes Biryani :-)  I usually make biryani in pressure cooker, and always it comes out well.  I never tried dum biryani either on the cook top or in the oven.  Recently I heard from my brother in law Madhan that his friend made oven baked biryani and it was awesome like in restaurant style.  He said that he tried couple of weeks ago insisted me to try it soon.  I took two weeks time and this sunday I made it as a special lunch and wow....it was delicious.  I made it! Thank you Madhan :-)   


This oven bake biryani gives very unique flavour and I could say that it is like restaurant style.  My little one Pinti said that "Amma...this is like we are eating in hotel" :-)  What more else I want!!! Try it and trust me you all will like it and we can bring the restaurant taste to home :-)



INGREDIENTS:

Basmati rice           - 1 cup
Onion                     - 1 thinly sliced
Tomato                   - 1 cut into pieces
Ginger garlic paste - 2 tsp
Carrot                     - 1/2 cut into small pieces
Mushroom              - 1/2 cup cut into pieces
Peas                        - 1/2 cup cut into pieces
Red chilli powder  - 1/4 tsp
Garam masala       - 1 tsp
Red food color      - a pinch
Mint leaves           - 1/4 cup
Salt                        - to taste

To temper:

Oil                           - 2 tsp
Cumin seeds / Jeera -  1 tsp
Cinnamon stick        - 1 small stick
Cloves                      - 3 to 4
Cardamom               - 3 to 4
Bay leaf                   - 1 break into pieces
Star anise                 - 1
Red chilli                 - 1 break into pieces
Green chilli             - 2 to 3

HOW TO MAKE:

Wash and soak basmati rice for 20 mins.  Boil 3 cups of water and allow to boil.  Drain and add soaked basmati rice in the boiling water.  Allow to half cook and not fully.  Drain the water in the colander and keep the half cooked rice aside.


Heat oil in a pan add cumin seeds, bay leaf, cinnamon stick, cloves, star anise and cardamom.  Add green chilli and red chillies.  Fry well and then add sliced onions.  Fry until it turn transparent then add ginger garlic paste.  


Blend well till the nice aroma comes and then add chopped tomatoes.  Fry until the tomatoes tender then add chopped vegetables.  Add red chilli powder and garam masala.  


Mix well and sprinkle some water and allow to cook.  These three veggies (carrot, peas and mushroom) need not to be cooked well and saute them for 5 to 7 mins and then add mint leaves. Meanwhile preheat oven for 400°C.  Mix well and turn off the stove.  Take a baking pan and start spreading the cooked veggie mixture and then topped by rice.  Follow the same until the cooked rice and mixture done.  Make it 2 to 3 layers of it depends on the size of the pan / vessel.  


Mix red food color in a tsp of water.  


Sprinkle the red food color water on the top coat here and there.  Cover with foil and bake it for 40 minutes.  


Serve hot with any choice of raitha.




TIPS:

Adding vegetable is absolutely is your choice.

Potato, capsicum, beans, soya chunks can be added too.

If you are adding potato then cook potato first then add other vegetables.  In pressure cook method all vegetables can be added in one time.

Garnish with chopped coriander before serving.
