PANEER PARATHA / STUFFED PANEER PARATHA


It was a long time that I made stuffed parathas.  I was started making chapathis for dinner today and then I realised I have paneer in stock.  So I made stuffed paneer parathas and kids loved it.  They started asking me to make this daily :-)  I always get scared to make stuffed parathas coz, sometimes when I make circle the stuff will start to come out.  Also I always thought it takes time.  Today I found it very easy and in 30 minutes I  made 10 to 12 parathas and served very hot :-)  


Do not think it is difficult to make! Trust me you will find it very easy and you will start making this stuffed parathas often.  For these stuffed parathas we no need to make any side dish and the kids just will eat as it is and best combo is curd.  Mix curd with little red chilli and cumin powder and that's it. Dip it and enjoy hot parathas.  

INGREDIENTS:

For dough:

Wheat flour        - 1 cup
Oil                      - 1 tsp
Water                  - as needed
Salt                     - as needed (Optional)

For stuffing:

Grated paneer       - 1/2 cup
Onion shallots      - 2 tsp chopped finely
Red chilli powder - 1/4 tsp
Cumin powder     - 1/4 tsp
Asafoetida            - a pinch
Salt                       - as needed

HOW TO MAKE:

Mix wheat flour, oil, salt and add water little by little and mix well.  


Knead well and make a soft and non sticky dough.  Keep covered and let us prepare the stuffing. 


In a mixie / blender put paneer pieces and give a gentle strokes and crumble it.  In a bowl add crumbled paneer, chopped green onion shallots, red chilli powder, cumin powder and needed salt.  Make sure not to add to much salt since we added in the dough.  


Mix well by hand without adding water.  Make equal sized ball and keep aside.  Take the mixed dough and knead again then make a equal sized ball out of it.  


Roll the dough into a small circle and keep the paneer mixture ball in the centre and bring all the sides towards the centre as shown in the below pic.  Flatten gently by using your palm then roll out by roll pin to thin parathas.   


Heat tawa and drizzle some ghee.  Cook parathas both sides and grease little ghee on the top of the parathas on each side.  Press gently on the top to ensure the paratha is getting cooked evenly.  


Serve hot with curd on the top of red chilli an cumin powder :-)  



TIPS:

Wash the paneer and drain the water fully.  Make sure that there is no water in the paneer, else the stuffing will be very sticky.  You can use the frozen paneer too. If so keep the paneer outside and bring into the room temperature before you make it.  

I used onion shallots and add coriander leaves instead or both can be added too.

Stuffing is purely our choice and add whatever you feel like.
