Chettinad Cuisine is the most renowned fare in Tamil Nadu. This wonderful cuisine offers a variety of vegetarian dishes including Idiyappam, Paniyaram, Kozhukattai, Adhirasam, Seeyam, and Kandharappam.  

In paniyaram they have many varieties such as Vellai Paniyaram, Karuppati Paniyaram, Paal Paniyaram, Kuzhi Paniyaram, Masala Paniyaram and Kandharappam.  

Today am here with an easy Vellai Paniyaram recipe which can be prepared for breakfast or an evening snack.

This paniyaram is very easy to prepare and you soaking only takes two hours. It can be made instantly as it does not need to ferment.

STEP BY STEP VELLAI PANIYARAM:

INGREDIENTS:

Raw Rice - 1 cup level up off the top
Urad dal  - heap the top around /  2 tbsp 
Salt        - to taste
Oil          - for frying

HOW TO MAKE:

Wash rice and urad  and soak for 2 hours.  Do not need to soak more than 2 hours. 
 


Make a fine paste by adding needed salt and water.  Mix well and bring to dosa batter consistency.  Heat oil in a kadai and pour a ladle of batter in the center. 


Flip and cook both sides.  Remove and drain on the paper towel. Repeat to finish the batter. 


Vellai Paniyaram is ready to serve!! Serve hot with spicy tomato chutney 😋


TIPS:

1/4 tsp of asafoetida can be added for flavour.  

Batter should be dosa batter consistency. Do not make it too watery as it may not fluffy. 

Add salt when grinding as adding in the batter may not mix well.
