MINT IDLY / PUDHINA IDLY




INGREDIENTS:

Idly batter           - 3 to 4 cups  Click here for idly batter IDLY BATTER
Mint leaves        - a handful

To temper:

Oil                    - 1/4 tsp
Mustard seeds  - 1/4 tsp
Urad dhal        - 1/2 tsp broken
Asafoetida       - a pinch

HOW TO MAKE:

Grind mint leaves in a mixie with little water and make a fine paste.



Take idly batter in a bowl (do not add water for consistency now).  Add mint paste and mix well.


Heat oil in a pan, splutter mustard seeds, urad dhal and asafoetida.



Add the seasoning on the batter and blend well.  Now add needed water for making idly batter consistency.  Take a ladle of batter and pour it in a idly plate.  Cover the lid and cook still the steam rises. It will take 15 to 20 mins to get cooked.



Remove the idlies from the plate and serve hot.

Mint Idlies are ready... We had with Tomato Kurma and it is an excellent combo.

TIPS:

Add little more water and make it as dosa batter consistency for making mint dosa.
