PLANTAIN FRY / VAZHAIKAI FRY / VAZHAIKAI VARUVAL






INGREDIENTS:

Plantain / Vazhaikai   - 2 nos
Onion                         - 1
Red chilli powder       - 1 tsp
Coriander powder      - 1 1/2 tsp
Turmeric powder       - 1/4 tsp
Salt                            - as needed

To temper:

Oil                            - 2 tsp
Mustard seeds          - 1/2 tsp
Urad dhal                 - 1 tsp broken
Asafoetida                - a pinch
Curry leaves             - few

HOW TO MAKE:

Cut plantain's edges in two sides and just cook it for 5 to 6 mins in a deep vessel with skin.  I steamed it for 3 mins by using steamer.  Do not pressure cook it and it may get mushy. Once it get cooked peel the skin and cut into pieces as shown in the picture below.


Heat oil in a kadai splutter mustard seeds, add urad dhal, asafoetida and curry leaves.   Add chopped onions and fry till it turn into brown in color.  Add chilli, coriander & turmeric powder and mix well. Add the chopped plantain pieces and mix well.  Add enough salt.  Saute them well till turn into golden brown.


Vazhaikai fry is ready... :-)

Serve with Sambar, rasam & curd rice.



TIPS:

Follow the same method for potato fry too.

Pressure cooking the plantain may result get mushy even in one whistle.  It is always better to cook in a deep vessel or in a steamer.

Plantain can be fried directly without cooking before.
