THIRUVATHIRAI ROTI / THIRUVATHIRAI ADAI




INGREDIENTS:

Rice flour               - 1 cup
Jaggery                   - 1 cup
Coconut                  - 3 tsp cut into pieces
Cardamom powder - a pinch
Ghee                       - as needed


HOW TO MAKE:

In a deep pan add jaggery with two cup of water and make syrup.  Wait until the jaggery get dissolves then strain and remove the impurities.  Keep aside.


Make coconut into tiny pieces.



In a bowl add rice flour, jaggery syrup, coconut pieces, cardamom powder and mix well.  Make a smooth dough. If the jaggery syrup is not enough then add water little by little.



On a ziploc sheet or on a banana leaf place one small ball size dough and press it gentle by fingers.  Make a thick nor thin roti.


Heat a tava and place roti.  Apply ghee on the surrounded roti and cook both sides.  Allow to cook till it turn into golden brown spots on it.



Thiruvathirai roti ready :-)
