MADELEINES

   
Madeleine is a traditional small cake from France.  Madeleines are very small sponge cakes with a distinctive shell like shape acquired from being baked in pans with shell shaped depressions.  I learnt this from Disha, my friend Sheela's daughter.  She is an excellent baker.  Thank you Disha for this wonderful recipe.  Madeleines can be made in any essence like chocolate, vanilla, strawberries, lemon etc.  I made them with coconut essence and we had with whipped cream.  Yummmm. Come lets go and bake Madeleines

INGREDIENTS:

Self raising flour      - 1 1/2 cups
Eggs                        - 2
Milk                        - 3 to 4 tsp
Sugar                      - 1 cup
Melted butter          - 1/4 cup
Coconut essence    - 3 to 4 tsp


HOW TO MAKE:

Preheat oven to 200°c

In a bowl add egg, milk, coconut essence, melted butter and sugar.  Blend well with whisk until the sugar dissolved.


Add self raising flour and blend well without any lumps.  Grease madeleines tray.



Take a small ladle of the mixture and put in the moulds and keep the tray in the oven.  Cook for 10 to 15 mins or until it get cooked.  Check madeleines with toothpick or the stick whether it got cooked.  The toothpick or the stick should not get stick in the cake.  If it come out smoothly then the madeleines are ready.



Soft & Spongy Madeleines are ready.  Serve with whipped cream.


TIPS:

Try with difference essence and in different moulds.
