THORAN - Mixed Vegetable Thoran - Kerala Style



Thoran is a dry vegetable dish made in Kerala.  It is basically finely chopped vegetables cooked with shallots, green chillies and fresh grated coconut.  Instead of making one vegetable we can make mixed veggies and thats what I made today.  Enjoy this Kerala cuisine.... :-)


INGREDIETNS:

Carrot, Cabbage & Beans - 1 Cup together finely chopped
Green chillies                    - 2 Partly sliced
Garlic                                - 2 cloves finely chopped
Turmeric powder              - 1/4 tsp
Onion                               - 1 finely chopped
Grated coconut                 - 1/4 cup
Salt                                   - as needed

To temper:

Coconut oil                - 1 tsp
Mustard seeds            - 1/4 tsp
Cumin seeds              - 1/2 tsp
Curry leaves              - few

HOW TO MAKE:

In a bowl mix all the vegetables, chopped onion, green chillies, garlic, turmeric powder, grated coconut and salt.  Mix well and keep aside.          


Heat oil in a kadai splutter mustard seeds, cumin seeds and curry leaves.  Add the mixed ingredients and blend well. Fry them till the raw smell goes and cover with the lid.  Stir time to time until get cooked.




Thoran is ready.  Serve with sambar, kara kuzhambu rasam :-)



TIPS:

Do not add water and the vegetables supposed to stir often and cook in that oil.

You can made separate vegetable thoran by using cabbage, beans, beetroot, drumstick and etc.
