VENDAIKKAI SAMBAR / LADIES FINGER SAMBAR




INGREDIENTS:

Ladies finger  / Vendaikkai  - 1/4 kg or 10
Onion                                   - 1 thinly sliced
Green chillies                       - 2
Sambar powder                    - 1 tsp
Turmeric powder                 - 1/4 tsp
Toor dhal / Thurvaram
parupu                                  - 3/4 cup
Tamarind                              - 1 lemon size ball
Salt                                       - as needed

To temper:

Oil                               - 1 tsp
Mustard seeds             - 1/4 tsp
Fenugreek seeds         - 1/4 tsp
Curry leaves               - few
Asafoetida                  - a pinch

HOW TO MAKE:


Wash ladies finger, wipe with clean dry cloth.  Cut both edges slightly and cut into pieces like 1 to 2 inches or as wish.  Keep aside.  Pressure cook the toor dhal with 1 1/2 cup water and allow two to three whistles.  Mash well and keep aside.  Soak tamarind in a cup of water, extract juice and keep aside.  

Heat oil in a kadai splutter mustard seeds add fenugreek.  Add onions, green chillies and asafoetida.   Fry the onions till it turn transparent.  Add ladies finger pieces and fry well.  Cook for 5 mins.


Add toor dhal mixture, sambar and turmeric powder.  Mix well add salt.  When it starts boiling add tamarind juice.  Blend well and allow to boil.  Turn off the stove and add a tsp of gingelly oil for taste.


Serve hot with rice and some vegetables, papad.





TIPS:

Adding green chillies will give nice flavour for vendaikai sambar.  

You can follow the same method for Poosanikai sambar (Green pumpkin)

Care to be taken when adding sambar powder coz green chillies will give extra spicy.
