SIRAGU AVARAI| WINGED BEANS

Siragu Avarai or Winged Beans is one of the rarest bean varieties. I got these healthy beans from my friend Tharini who has her own plant! She said it is so good and asked me to blog the recipe. I made this curry with moong dal and it was so delicious. I would really love to have this plant as it is very rare and also has good health benefits like other beans. We can make many things with these beans, including sambar, kootu, and poriyal😋

STEP BY STEP WINGED BEANS STIR FRY:

INGREDIENTS:

Siragu Avari           - 2 Cups chopped
Moong dal              - 1/4 Cup
Turmeric Powder   - 1/4 tsp
Salt                        - to taste
Water                     - as required

TO TEMPER:

Oil                         - 2 tbsp
Mustard seeds      - 1/4 tbsp
Curry Leaves       - few
Red Chillies         - 4 - 5
Asafoetida            - 1/4 tsp                      

HOW TO MAKE:

Remove fiber from the winged beans, chop finely and wash well.  Keep aside.



Heat oil in a kadai, splutter mustard seeds, moong dal, curry leaves, red chillies and asafoetida.  Saute till moong dal golden brown.


Add chopped winged beans along with turmeric powder, salt and 1/4 cup of water.  


Mix well and cook till winged beans and moong dal soft and cooked.  If needed add water till the beans get cooked.  Cook till the water fully absorbed. 


Add grated coconut and mix well.  Cook in medium flame for three more minutes.  Good with sambar, rasam and curd rice. Serve with hot rice topping of little ghee 😋😋


TIPS:

Onions can be added.  If you adding onion moong dal can be skipped, but both can be added as well. 

Do not add more water because the water should get absorbed completely so sprinkle water when needed till the beans get cooked.
