STEP BY STEP KAMBU IDLI:

INGREDIENTS:

Pearl Millet         - 3 Cups
Idli rice              - 1 Cup
Urad Dal             - 1 Cup
Fenugreek Seeds - 1/4 tbsp 
Salt                    - to taste

HOW TO MAKE:

Wash pearl millet and idli rice together and soak for 5 - 6 hours. Wash Urad dal and soak 5 - 6 hours along with fenugreek seeds. 


Grind pearl millet and rice into medium coarse paste by adding water.  Consistency should be thick not watery.  Grind urad and fenugreek and make a fluffy batter.  Mix well along with needed salt and ferment overnight / 8 - 9 hours. 


Mix the batter well, if needed add water and bring to idli batter consistency.  Pour into idli mould and steam for 10 to 12 minutes or until cooked.  


Soft Kambu Idli is ready to serve!!😋 Serve hot with any chutney or sambar of your choice. 



TIPS:

Adding rice is absoultely your choice if skipping rice then add 4 cups of pearl millet.

Do not grind watery as the idli may not be fluffy. 

Grind urad into fluffy batter for soft idlis.
