STEP BY STEP GINGER CHUTNEY:
INGREDIENTS:
Oil - 3 tbsp
Coriander Seeds - 1/4 cup
Urad dal - 1/4 cup
Channa Dal - 1/4 Cup
Garlic - 1 pod
Ginger - 1/2 cup
Red chilli - 20 - 25 - adjust spice level
Jaggery - 1/4 cup
Cumin Seeds - 1 tbsp
Tamarind - Gooseberry size
Salt - to taste
Water - as required
TO TEMPER:
Gingelly oil - 2 tbsp
Mustard Seeds - 1/4 tbsp
Curry leaves - few
HOW TO MAKE:
Heat 2 tbsp of oil and saute channadal, coriander seeds and urad dal until golden brown. Add red chillies and adjust adding depends on your spice level. Saute until see brown spots on the chillies.
Add peeled garlic and ginger along with tamarind. Cook until nice aroma comes. Cool down completely.
Transfer to blender along with jaggery, cumin seeds and needed salt. Make a fine paste by adding little water.
Heat sesame oil in a pan splutter mustard seeds, add curry leaves. Temper the chutney. Mix well and serve with idli dosa and any tiffin of your choice.

TIPS:
Adding jaggery is optional.
Adjust adding red chillies depends on your spice level. The measurement I have given is super spicy.
