STEP BY STEP SPINACH THAMBLI:
INGREDIENTS:
Palak - 2 handful
Curd - 2 cups
Green chilli - 3
Cumin Seeds - 1 tbsp
Coconut - 1/4 cup
Ghee - 2 tsp
TO TEMPER:
Oil - 1 tbsp
Mustard Seeds - 1/4 tsp
Urad Dal - 1 tbsp
Red chilli - 1
Curry leaves - few
Asafoetida - 1/4 tsp
HOW TO MAKE:
Wash spinach and cut into pieces. Whisk curd and keep aside.
Heat oil in a kadai, add cumin seeds and green chillies. Saute for 30 seconds, add chopped spinach.
Saute spinach and cook until soft. Do not add water. Allow to cool down. Transfer to blender along with coconut and needed salt.
Make a fine paste by adding little water. Add ground paste in the beaten curd.
Mix well. Heat oil in a pan splutter mustard seeds, add urad dal, red chillies, curry leaves and asafoetida. Saute until urad golden brown.
Temper the curd mixture. Serve with rice or any variety rice of your choice.
Palak Thambli is ready to serve 😋
TIPS:
This thambli can be prepared with other spinach and vegetables.
Try with different vegetables and greens.
