STEP BY STEP AVIYAL RECIPE:

INGREDIENTS:

Mixed Vegetables 3 cups 
I have used - add the vegetables on your choice)
(Yam, Raw Banana, Ash Gourd, Beans, Tindora, Carrot, Drumstick, Broad Beans)
Turmeric Powder - 1/4 tsp 
Grated Coconut - 1/4 cup 
Cumin seeds     - 1 tbsp 
Green Chili       - 5 - 6 (Add as required)
Curd                - 1/4 cup 
Salt                 - to taste

TO TEMPER:

Coconut Oil      - 2 tsp 
Mustard seeds  - 1/2 tsp 
Urad dal           - 1 tsp 
Curry leaves     - few

HOW TO MAKE:

In a pressure cooker add coconut oil, add mixed vegetables, turmeric and needed salt.  Mix well.  Add a cup of water. 


Pressure cook and allow one whistles.  Do not allow more than one whistle as the vegetables may turn mushy.  


In a mixie add grated coconut, cumin seeds and green chili.  Make a fine thick paste by adding little water. 


Once the vegetables cooked add ground coconut paste and curd.  Keep stove in medium flame.  Combine well and check salt and add if required.  Cook for 5 minutes in a medium flame and do not allow to boil.  


Heat coconut oil in a sauce pan splutter msutard seeds, add urad dal and curry leaves.  Temper Aviyal. Mix well and turn off the stove. 



Aviyal is ready serve 😋 Adai is super perfect for Sambar Sadam and goes well with meals.  As well know this is perfectooo for Adai 😋 



TIPS

Do not cook vegetables mushy.  If cooking in pressure cooker one whistle is more than enough and allowing more than one whistle vegetables may turn mushy.  

Once added ground coconut paste and curd cook only 5 to 6 minutes in a medium flame and no need to bring to boil. 

Adding vegetables are absolutely your choice, Raw banana, Ash gourd, yam will add more flavor for Aviyal.
