VENGAYA CHUTNEY / ONION CHUTNEY



INGREDIENTS:

Onions              - 3 chopped
Red chillies       - 10
Salt                   - as needed
Gingelly oil      - 2 Tsp
Oil                    - 1 Tsp for frying

To temper:

Oil                   - 1/2 Tsp
Mustard seeds - 1/4 Tsp
Urad dhal        - 1/2 Tsp

HOW TO MAKE:

Heat 1 tsp of oil in a kadai add chopped onions and red chillies.  Fry until it turn into brown in color.
Allow it to cool down and in a mixie make paste of it.  Do not need to make a fine paste.




Heat 1/2 tsp oil splutter mustard seeds and add urad dhal.  Add the onion and red chilli paste.  Stir well and add needed salt.  While it get bubbles add gingelly oil and mix well.  Cook for 2 more minutes after added the gingelly oil.




Transfer the chutney to the serving bowl.  Serve with hot idlies or dosa :-)




TIPS:

Add 2 tomatoes to make kara chutney.

Add tomatoes instead of onions and do the same steps to make tomato chutney.
