COCONUT BURFI / THENGAI MITTAI






INGREDIENTS:

Grated Coconut       - 1 Cup
Sugar                       - 1 Cup
Water                       - 1/4 Cup
Cardamom powder - 1 pinch
Ghee                       - 2 Tsp
Cashews                 - 5 to 6


HOW TO MAKE:


In a kadai add sugar and 1/4 cup of water.  Let it boil and allow the sugar dissolves in it.  When bubble comes add grated coconut.  Grease tray with ghee and keep it ready.


Stir continuously in a medium flame.  The syrup and the coconut will get mix well and form a thick gravy.  Add cardamom powder and mix well.  Do not let the coconut change its color.  While stirring continuously the mixture starts leaving the pan and it will form a bubbles.  At that time pour the mixture to the greased tray / plate and level it well.  Cut into pieces while it is warm enough as shown in the below fig.  Place cashews pieces on each burfi.  Store it in a airtight container.
