BHINDI STUFFED FRY / VENDAIKAI STUFFED FRY / OKRA STUFFED FRY



INGREDIENTS:

Vendaikai / ladies finger /
Okra                                  - 500 gms
Onion                                - 2 finely chopped
Ginge garlic paste             - 1 Tsp
Tomato                             - 1 Finely chopped
Chilli powder                   - 1/2 Tsp
Coriander powder            - 1 Tsp
Garam masala                   - 1/4 Tsp
Turmeric powder              - 1/4 Tsp
Salt                                   - as neede
Oil                                    - 1 Tsp

To temper:

Oil                 - 1 Tsp
Cumin seeds - 1/4 Tsp
Asafoetida   - a pinch


HOW TO MAKE:

Stuffing:

Heat oil in a kadai add cumin seeds and asafoetida.  Add chopped onions and fry until turn into transparent.  Add ginger garlic paste and stir well till the raw smell goes.  Add chopped tomatoes, chilli powder, coriander powder, garam masala, turmeric powder and salt.  Mix well.  Do not add water.  Stir well till it form as a dry gravy as shown in the fig. Allow it to cool and keep aside.



Wash the ladies fingers and wipe with clean cloth.  Cut only the top (head side) and keep aside.  Slit length wise slightly as shown below fig and stuff the masala inside the bhindi.



Do stuff one by one and keep the stuffed bhindis aside for 10 to 15 mins. Heat oil in a kadai and place the stuffed bhindis one by one.  Add remaining masalas on the top and cover with the lid.  Blend with care and cook on both sides.  Fry till it get crispy on both sides.




Bhindi stuffed fry ready :-) Serve with chappathies.
