STEP BY STEP ASHOKA HALWA:
INGREDIENTS:
Yellow Moong Dal - 1/2 Cup
Sugar - 1 1/4 Cup
Wheat flour - 1/4 cup
Ghee - 1/2 cup
Cashews - 10
Cardamom powder - less than 1/4 tsp
Red Food color - less than 1/4 tsp
HOW TO MAKE:
Pressure cook moong dal with 1 1/2 cup of water. Allow 3 - 4 whistles. Once cool down make a fine paste without adding water.
Heat 2 tbsp of ghee fry cashews until golden brown. Keep aside.
Heat 2 tbsp needed ghee saute wheat flour until nice aroma comes.
Add ground moong dal paste and keep stirring. Stir without any lumps. Add 2 tbsp of ghee and stir continuously until thickens.
When start thickening add sugar and stir continuously. Cook until sugar dissolves. Keep stirring do not leave as it may stick in the bottom.
When it turns glossy texture add 2 tbsp ghee and keep stirring. When thickens little add red or saffron food color.
Mix well, add 2 tbsp ghee and keep stirring. Slowly the ghee separates from the pan. Add ghee often till it reaches the thick consistency. This process will take at-least 25 to 30 minutes. Keep stirring add ghee in between.
When the mixture leaves the pan add ghee again and keep stirring. It thickens and you can able to roll the mix like a dough.
