Some vegetable combos will give tastes heaven and this sambar is one of that combo which my Grandma and my Mom makes. Brinjal, Drumstick and Mango gives unique flavor to the sambar and tastes delicious. Try this sambar and trust me you will love it.

STEP BY STEP KATHIRIKKAI MURUNGAIKKAI MAANGAI SAMBAR:
INGREDIENTS:
Toor Dal - 1 Cup
Brinjal - 3 cut into pieces
Drumstick - 1 medium size
Mango - 1 medium size
Sambar powder - 2 tbsp
Tamarind juice - 1 cup
Water - 3 - 4 cups or as needed
Onion - 1 big
Tomato - 1 big
Turmeric powder - 1/4 tsp
TO TEMPER:
Oil - 2 tbsp
Mustard Seeds - 1/4 tbsp
Fenugreek seeds - 1/4 tsp
Asafoetida - 1/4 tsp
Curry leaves - few
HOW TO MAKE:
Cut mangoes big pieces. Remove fiber from the drumstick and cut into pieces. Cut brinjal length wise keep in the water to avoid change its color.
Pressure cook toor dal with 3 cups of water along with turmeric powder. Allow 4 - 5 whistles and this may vary depends on the cooker. So allow whistle accordingly. Once cooked mash the dal and keep aside.
Heat oil in a kadai splutter mustard seeds add fenugreek seeds and curry leaves. Add chopped onion and asafoetida. Saute and cook until onion translucent.
Add chopped tomato, brinjal, drumstick, sambar powder and needed salt. Mix well and saute for 2 minutes until tomatoes are soft.
Add a cup of tamarind juice and mix well. Cook till veggies are soft.
Once the vegetables cooked add mashed toor dal along with 3 to 4 cups of water or for needed consistency. Bring to boil atleast for 3 to 4 minutes.
Cook in medium flame, add mango pieces.
Do not over cook mangoes. If the mangoes skin too hard cook for more than 5 minutes and if not turn off the stove after 5 minutes. Mangoes will get soft in the hot. Turn off the stove.
Kathirikkai Murungaikkai Maangai Sambar is ready to serve 😋
TIPS:
Mangoges get cook fast hence it should be added at the end.
Adding mangoes in the beginning, the mangoes skin will get peeled soon and get mushy. So add mangoes at the end.
