STEP BY STEP PERUNGAYA PODI | HING POWDER

INGREDIENTS:

Hing - as required - I used LG Perungayam 

LG Hing / Take any brand of your choice. 



If the hing is very hard put in mortar and break into pieces.  If it is soft cut into pieces or even you can pull by hands.



Dry roast in batches - bigger, medium and smaller or in the other way.  It helps to roast hing evenly. 


Dry roast in medium flame until puffs up and cool down completely. 


Make a fine powder. 


Spread the powder in a plate and once cooled down store in airtight container. 



TIPS:

Do not over fry hing as it may smoky. 

Dry roast until puffs up and cool down completely then powder it. 

Need not to roast in an oil.
