STEP BY STEP ESSENCE DOSA:
INGREDIENTS:
Oil - 1/4 Cup
Onion - 1 Big finely chopped
Tomato - 2 finely chopped
Ginger Garlic paste - 1 tbsp
Mint leaves - few
Red Chilli Powder 1 tbsp
Coriander powder - 2 tbsp
Turmeric powder - 1/4 tsp
Salt - to taste
Water - 3 - 4 cups
TO GRIND:
Black Pepper - 3 tbsp
Cloves - 4 - 5
Cinnamon Stick - 2 small pieces
Star Anise - 2
Fennel seeds - 1 tbsp
Fried Gram Dal - 1/2 Cup
Grated Coconut - 1 Cup
Garlic - 1 pod - leave some skin, do not peel fully
HOW TO MAKE:
In a blender add all the "To Grind" ingredients and make a fine paste by adding little water.
Heat oil in a kadai add chopped onions along with ginger garlic paste and salt. Saute and cook until onion translucent.
Add chopped tomatoes and mint leaves. Cook until tomatoes are tendered and oil separates.
Add red chilli powder, coriander powder and turmeric powder. Mix well and cook till oil seperates.
Add ground paste along with 2 - 3 cups of water or as required. Mix well.
Stir often to avoid the gravy stick in the bottom. Bring to boil and slowly the oil will float on the top.
When oil seperates and float on top of the gravy turn off the stove. Add hand full of fresh curry leaves.
Heat and grease dosa tawa. Make thick dosa and cook both sides.
Spread essence on the top of the dosa and serve hot. Spread essence generously and enjoy the Juicy, Spicy and Delicious Essence Dosa.
TIPS:
Potatoes, raw banana and other veggies can add for making even more rich.
This is a plain essence or salan for dosa which is a good combo for roti, pulka and parota as well.
