STEP BY STEP VATHAKUZHAMBU PODI:
INGREDIENTS:
Coriander Seeds - 1/2 Cup
Toor dal - 1/4 cup
Channa dal - 1 tbsp
Black pepper - 3/4th tbsp
Cumin Seeds 3/4th tbsp
Fenugreek Seeds - 1/4 tsp
Turmeric powder - 1/4 tsp
Asafoetida 1/4 tsp
Red chilli - 8 - 10
Kashmiri Chilli - 4 - 5 to enhance the color but it is optional
HOW TO MAKE:
Dry roast coriander seeds and toor dal separately. Dry roast until hot do not over roast them. Keep aside.
Dry roast channa dal and pepper together. Keep aside.
Dry roast fenugreek.
Dry roast cumin seeds and mustard seeds together.
Dry roast red chillies. Kashmiri chilli enhance the color hence added. This can be skipped and can substitute adding more red chillies.
Allow all the spices to cool down completely.
Transfer to the blender and make a fine powder along with turmeric powder and asafoetida.
Vathakuzhambu Podi is ready. Once cool down store in an airtight container.
