FRIED RICE





INGREDIENTS:

Basmati rice           - 1 cup
Olive oil                 - 2 Tsp
Mixed vegetables   - 1 1 /2 cup
(Carrot, beans,
cauliflower florets,
spring onion)      
Pepper powder      - 1 tsp
Soy sauce              - 1 tsp
Salt                        - as needed

HOW TO MAKE:

Cook basmati rice with 11/2 cup water and fluff the rice with a fork gently and allow it to cook.  Keep aside.




Wash the vegetables and chop finely.  Heat oil in a kadai and fry the vegetables except the spring onions.  Do not cook finely, the veggies should be crunchy. Fry for 5 to 7 mins and add the chopped spring onions, pepper powder and needed salt.  Add soy sauce after a min and blend well.





Add the cooked rice and blend the rice carefully without breaking the rice.  Check the salt before you turn off the stove and add as needed.  Fry the rice with the vegetables in the normal heat for 5 mins and turn off the stove.





TIPS:

When you cook rice add a tsp oil, the rice will not get stick with one by one also it will help you to fluff it well.

If you add cauliflower wash well and put it in a boiled water for 20 mins.

You can use refined oil too instead of olive oil.
