MALAI KOFTA - WITH MIXED VEGETABLES



INGREDIENTS:

For Kofta:

Potatoes                - 4
Peas                      - 1/4 Cup
Corn                      - 1/4 Cup
Red chilli powder - 1/2 Tsp
Corn flour             - 3 Tsp
Salt                       - as needed
Maida                   - for rolling
Oil                        - for deep frying

For Gravy:

Onion                    - 3
Tomatoes              - 3
Ginger Garlic
paste                     - 1 Tsp
Red chilli powder - 1 Tsp
Coriander powder - 1 1/2 Tsp
Garam masala       - 1 Tsp
Turmeric powder  - 1/4 Tsp
Cashew                - 6 to 7
Thick & Cream    - 2 Tsp
Salt                       - as needed
Coriander leaves  - 2 Tsp finely chopped 

To temper:

Oil                       - 1 Tsp
Cumin seeds       - 1/2 Tsp

HOW TO MAKE KOFTA:

Wash and peel potatoes skin and cut into pieces.  Steam potatoes, corn and peas together.  Or pressure cook the potatoes witch skin and allow 3 whistles.  Peel the skin and keep aside.  Cook corn and peas and drain the water fully.  Mix all the vegetables together and mash well.



Add chilli powder, salt and corn flour and make a soft dough.  Take a small quantity of it and make small size ball as shown in below fig.



Make all the balls and heat oil in a pan for frying.   In a plate spread maidha and just roll ball on it as shown below.  Once the oil hot start frying all the balls in a batch wise.




Drain the Koftas on the tissue and allow it to cool down.  Koftas are ready now.




HOW TO MAKE GRAVY:

Cut onion and tomato into pieces and make a fine paste separately.  Heat oil in a kadai and splutter cumin seeds.  Add onion paste and fry until it turn into brown in color.  Add ginger garlic paste and fry till nice aroma comes.



Add tomato paste, red chilli powder, coriander powder, garam masala and turmeric powder.  Mix well and make a fine gray.  Add a cup of water and allow it to boil.


Make cashew into fine powder and add the same in the gravy. Mix well and add the thick & cream too. Blend well and add salt.  We already added salt in the kofta so add only little bit salt as needed. Mix well and turn off the stove.




By the time Koftas should be cooled down.  Add the koftas one by one ad mix it carefully without breaking the koftas.



Garnish with coriander when serve.  Serve with Rotis & Chappathies.



TIPS:

All purpose flour also can be used instead of Maida.

Mixed vegetables like carrot, cauliflower and beans also can be added.

For koftas besan flour can be used instead of corn flour.
