VEG PATTIE RICE






INGREDIENTS:

Steamed rice            - 2 Cups
Veg Pattie                - 3 (Store one)
Onion                       - 1 Finely chopped
Tomato                     - 1 Finely chopped
Green shallots,
Capsicum  & Peas    - 1/2 Cup
Olive oil                   - 3 Tsp
Cumin seeds            - 1 Tsp

To grind:

Tomato                  - 1
Onion                    - 1
Garlic                     - 3 Cloves
Curd                       - 2 Tsp
            
HOW TO MAKE:
  
Pressure cook 2 cups of rice with 4 cups of water and keep aside.




Heat a tava and place the patties.  Cook on both sides till it turn brown in color.


Heat a olive oil in a deep pan and put all the vegetables onion, Tomatoes, peas, capsicum, green shallots.  Just fry and blend well.  Vegetables should not get over cooked and be it like crunchy.  Allow it to boil and wait till it form a thick gravy.



Add the cooked rice on the gravy and mix well with the spatula.  Cut the patties into pieces and mix with the rice.



Easy lunch box veg pattie rice ready.




TIPS:

You can fry the veg pattie in the previous night and can be used for next day while preparing lunch.

Use peri peri sauce (hot or mild) for preparing Nando's veg rice.
