KARABOONDHI



INGREDIENTS:

Besan flour  /
Kadalai mavu         - 1 Cup
Rice flour               - 3 Tsp
Red chilli powder  - 1 Tsp
Baking soda           - a pinch
Yellow food color  - a pinch
Cashews                 - 1/4 cup broken
Peanuts                   - 1/4 Cup with skin
Curry leaves           - 2 strings
Salt                         - as needed
Oil                          - for deep frying


HOW TO MAKE:

In a bowl add besan & rice flour, baking soda, yellow food color, red chilli powder and needed salt.
Mix well together by adding water little by little. The batter should be like dosa batter consistency as shown in the below fig. Heat oil in a pan for deep frying.





Pour a ladle amount of batter on the boondhi ladle (Jarni) and tap it gently. Tiny balls of the batter will fall into the oil.  Fry the boondhies till it turn golden brown.




Drain it on a tissue.



In the same oil, fry cashews, peanuts and curry leaves.



In a big bowl add fried boondhies, cashews, peanuts and curry leaves.  Shake well to get mix togehter.
Crispy Karaboondhies are ready to munch...  Store in a airtight container.
