Shankarpali / Shakkarpare | Shakkarpara


Shakkarpara is a very simple yet delicious biscuit made from maida/all purpose flour, ghee, sugar and milk. This scrumptious biscuit can be made very quickly. This will become a kid’s favorite as it is very sweet and will melt in their mouths. This sweet snack is also called Shankarpali / Shakkarpare 😃😋



INGREDIENTS:

All purpose flour    - 1 cup
Ghee                      - 1/4 cup
Milk                       - 1/4 cup
Sugar                     - 1/4 cup
Oil                         - for deep frying

HOW TO MAKE:

In bowl mix the ghee, sugar and milk together and whisk it till the sugar get dissolved.



Once the sugar dissolved add the all purpose flour and knead well and make a soft dough.



Cover the dough and keep aside for 30 mins. After 30 minutes divide the dough into equal parts. 


Heat oil in a pan.  Take a dough and start making a circle.  Make medium thick circle.  Remove uneven edges. 


Use pizza cutter or knife to make desired shapes.  I have made four shapes, diamond, square, oval and smiley faces.  


For smiley face, use small bottle lid for cut small circle. Use small spoon edge part for making lips and straw for two eyes.  Separate the pieces, will be easy when frying.  



When the oil is hot enough start frying them into batches.  Do not overcrowded as it may break.  Do not stir immediately and give at least a minute time to settle then stir. 


Fry until golden brown for crispy Shankarpali / Shakkarpare.  Finish all the dough, Cool down completely, store them in an airtight container.  Stays good for two to three weeks.  



TIPS:

Can be fried in ghee instead of oil.  Already ghee is there in the mixture so I do not prefer to fry in ghee.

Use the melted ghee always.

Make sure the measurement of the sugar as mentioned.  Adding more sugar will form a sticky dough.
