CARROT HALWA / GAJAR HALWA

INGREDIENTS:

Fresh shredded carrots      - 4 Cups
Milk                                  - 2 Cups
Ghee                                 - 1/2 Cup
Sugar                                - 1 Cup
Cashews                           - 10
Cardamom powder          - 1/4 Tsp

HOW TO MAKE:

Wash the carrots and use medium blade in the grater to grate, keep aside.  Heat the pressure cooker in medium heat add 3 tsp of ghee. Add grated carrots and mix well in the ghee.




Stir until the carrots turn pale.  The carrots will leave the raw smell and by that time add milk. Allow it to boil.  Let the carrots cooked well in the milk and the carrots will absorb the milk in 15 to 20 minutes. Stir well now and then not to burnt.



Once the milk completely absorbed by the carrots add sugar and mix well.  Stir it in regular intervals and the mixture turns thick.  At that time fry the cashews in a tsp of ghee and add in the mixture.  Add cardamom powder.When the mixture became thick add the remaining ghee.  Mix well.




Cook the halwa stirring continuously until the ghee separates out.  It will take 15 more minutes and be sure it should not burnt.



Serve hot / with ice cream :-) Yummmmm
