INGREDIENTS:

Oats                  - 2 Cups
Rice flour           - 1 Cup
Rava / Sooji       - 1 Cup
Urad flour          - 2 Tsp
Maida /
All purpose flour- 2 Tsp
Coriander leaves- 3 to 4 Tsp chopped
Ginger               - 1 piece medium
Green chiliies     - 4 to 5
Buttermilk          - 1 Cup
Water                - as required
Salt                   - as needed
Oil                    - as required

HOW TO MAKE:

Make a fine paste of green chillies and ginger and keep aside.

Make a fine powder of oats, in a bowl add oats, rice flour, maida / all purpose flour, rava, chopped coriander leaves, ginger chilli paste and needed salt.  Add the butter milk, enough water and mix it like a dosa batter.  Keep it aside for an hour.  It might thicken after a while as the rava absorbs the water.

At the time of making dosa, add enough water, and the batter should be like pouring consistency.

Heat the dosa tava on a high flame and do sprinkle water on the hot tava. If it get sizzles then the tava is ready to make dosas.

Take one ladle of batter and pour into the center of the tava and using the back of the ladle spiral the batter out to the edge of the tava.  As the batter starts to get firm use one tsp of oil around the edge of the dosa.
The dosa will absorb the oil and it will turn brown on the edges and by that time with dosa ladle turn it over the other side.  (If you want crispy dosa then leave it for some more time and should be careful not to be burnt).  Cook it for one more minute.

Then fold with dosa ladle, take out from the tava and servewith chutney and idly podi as per choice.
