THATTAKAI / COW PEA SAMBAR





INGREDIENTS:

Thattakai / Cow pea       - 1 cup (cut into pieces)
Moongdhal        - 1/2 Cup
Onion                - 1 chopped lenthwise
Tomato             - 1 Finely chopped
Sambar powder - 1 Tsp
Turmeric powder - 1/4 Tsp
Asafoetida           - 1/4 Tsp
Tamarind             - Small lemon size
Salt                     - as needed
Oil                      - 1 Tsp
Mustard seeds    - 1/4 Tsp
Fenugreek seeds - 1/4 Tsp
Curry leaves       - few

HOW TO MAKE:

Wash and cut the cow pea into pieces and keep aside.  Wash and pressure cook the moongdhal and mash it and keep it ready.



Soak tamarind in 1/2 cup of water for 10 to 15 mins and extract the juice and keep aside.



Heat oil in a kadai splutter the mustard seeds, add fenugreek seeds, asafoetida.  Add the onions and fry it till it turn transparent.  Add chopped tomatoes, sambar powder and turmeric powder and blend well.  Add the Thattakai / cow pea pieces and mix well.  Add one cup of water.  Once the vegetable cooked add the tamarind juice and cook the same for 10 more minutes. Turn off the stove and add one Tsp of gingelly oil and transfer it in to serving bowl.







Serve with hot rice
