MUSHROOM OMELETTE




INGREDIENTS:

Eggs                  - 4
Mushrooms       - 1/4 Cup
Onion                - 1 finely chopped
Garlic                - 3 cloves finely chopped
Tomato             - 1 finely chopped
Spinach            -  2 Tsp any spinach finely chopped
Chilli flakes      - 1/4 Tsp
Oregano           - 1/4 Tsp
Parsley             - 1/4 Tsp
Salt                  - as needed
Oil                   - 1/2 Tsp

HOW TO MAKE:

Break the eggs and blend well with spoon and keep aside.  Do not beat the egg.



Heat 1/4 tsp oil in a pan fry chopped onions and garlic till they turn golden brown in color.  Wash the mushrooms and drain the water.  Add mushrooms and tomatoes and mix well.  Add spinach (I used araikeerai), oregano and parsley and salt mix well.  Cook for two minutes and turn off the stove.  Keep the pan in the stove heat and allow it to cool. The masala need not to be over cooked.



Heat dosa tava and pour the egg and spread it like dosa.  Spread the mushroom masala lightly with the spoon on top of the egg.




Keep one plate ready on the side of the tava.  Once the omelette cooked use dosa ladle and carefully transfer the omelette to the place.  Immediately turn the plate and put the omelette on the tava and cook it for 1/2 a minute.  Just use the ladle or tilt the tava and transfer the omelette to the serving plate.




Cut into pieces and serve with tomato sauce.  Mushroom omelette is ready :-)
